Apple Crumble Muffins

Makes: 12 muffins


  • 3 cups almond meal
  • 2 tsp. baking powder
  • 2 tsp. ground cinnamon
  • 2 green apples diced
  • 3 tbsp. chia seeds
  • 250ml water
  • ½ cup honey
  • 1 tbsp. apple cider vinegar
  • 1 cup pecans, roughly chopped


  1. Preheat the oven to 180 degrees and line a 12 cup muffin tin with paper cases
  2. In a large bowl, mix together the almond meal, baking powder, cinnamon and diced apples until the pieces are coated in the mixture
  3. In another bowl mix the chia seeds with the water, 1/4 cup honey and the vinegar until well combined
  4. Pour the chia mixture into the dry ingredients and fold through gently
  5. Spoon the batter into the prepared paper cases
  6. Mix the chopped pecans with the remaining honey and spoon on top of the batter
  7. Bake for 35-40min or until the tops are starting to turn golden. Remove from the oven and cool on a wire rack
