Banana Stir-Fry Curry



  • 300g Desiree potatoes
  • 4 medium carrots
  • 1 zucchini
  • 2 red onion
  • 1 capsicum
  • 150g broccolini
  • 200g bean sprouts

Banana paste:

  • 2 ripe bananas
  • 1 tbsp. coriander
  • 4 cloves garlic
  • 1 tsp. ginger paste
  • 1 tsp. chilli flakes
  • 2 tsp. mustard seeds
  • ½ tsp. cinnamon
  • Rice and lime, to serve



  1. Cube potatoes. Boil in water until they have softened.
  2. Slice all the remaining vegetables thinly (julienne carrots and zucchini)
  3. Place all paste ingredients into a blender and blend until it becomes a liquid paste
  4. Heat 1 tsp. extra-virgin olive oil in a large wok. Add the potatoes and onion and stir-fry until they begin to brown. Add broccoli, capsicum then the remaining vegetables.
  5. Once the vegetables have cooked through, add the paste. Stir-fry for a couple of minutes, remove from heat and serve with rice and lime.
