Beef, Barley and Vegetable Soup


Ingredients: (Serves 8)

  • 650g lean beef, cut into 2cm cubes.
  • 2 cloves garlic
  • 2 Tbs mixed herbs
  • 1 Tbs olive oil
  • 1 onion diced
  • 1 leek, finely sliced
  • 4 mushrooms chopped
  • 2 zucchini chopped
  • ¼ capsicum diced
  • 2 carrot diced
  • 1/3 cup peas
  • 2 Tomatoes diced
  • 1 cup pearl barley
  • 3L beef stock
  • Pepper to taste

Method:

  1. Heat oil in pan and brown beef. Remove beef from pan.
  2. Sautee onion, garlic and leek until soft.
  3. Return beef to the pot and add remaining ingredients. Bring to boil.
  4. Scrape the scum off the top using metal spoon.
  5. Reduce to simmer for 90 minutes.
  6. Serve. Suitable to freeze.
