Caramelised Pork with Grilled Pineapple Salad


  • Spray canola or olive oil
  • 1 capsicum, sliced lengthways
  • 1-2 zucchini, sliced lengthways
  • 4 slices fresh pineapple
  • 1 pkt spinach
  • ¼ cup parmesan cheese
  • ¼ cup salted nuts of choice
  • 1 pork loin, pat dry with paper towel
  • 4 rashes of bacon, fat trimmed off
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • 1.5 tablespoons brown sugar
  • ½ teaspoon ground salt
  • Toothpicks


  • Mix spices, salt and sugar together in a bowl and rub over pork loin coating all over.
  • Carefully wrap the bacon around the outside of the loin securing on the sides with toothpicks. Heat a grill pan with oil.
  • Cook the pork loin for 5-7 minutes each side, do not turn until golden and caramelised. Then move to oven to cook for a further 10 minutes.
  • While the pork is in the oven, grill the pineapple, zucchini & capsicum before roughly chopping and mixing with spinach, Parmesan and nuts.
  • Let the pork rest for 10 minutes before removing toothpicks & slicing into 3 cm pieces. Serve on the grilled pineapple salad.
