Chicken and Lentil Salad

Ingredients (serves 1)

  • ¼ cup walnuts
  • 100grams shredded chicken
  • 4 Baby beetroots quartered
  • 1 tablespoon crumbed fetta
  • 2 cups spinach & rocket leaf mix
  • ¼ cup tinned lentils
  • 1/8 red onion sliced thinly
  • Lemon infused olive oil or caramelised balsamic vinegar for dressing



  1. Combine all ingredients together and serve immediately.

    For a vegetarian alternative add extra lentils instead of chicken
