Choc-Beet Loaf

Ingredients

  • 2 large beetroots, washed and grated raw
  • 2 eggs
  • ½ tsp. vanilla essence
  • 1 tsp. cinnamon
  • 1 ½ cups almond meal
  • ½ cup grated dark chocolate
  • 2 tbs. cacao/chocolate powder
  • 3 tbsp. butter
  • ¼ cup honey
  • 1 tsp. baking powder

Method

  1. Preheat oven to 180 degrees and line a loaf tin with baking paper.
  2. Blend all ingredients until it forms a smooth batter and then pour into loaf tin.
  3. Cook in a moderate oven for 40 minutes.

Tip: can also be made into muffins for lunch box snacks
