- 2 large beetroots, washed and grated raw
- 2 eggs
- ½ tsp. vanilla essence
- 1 tsp. cinnamon
- 1 ½ cups almond meal
- ½ cup grated dark chocolate
- 2 tbs. cacao/chocolate powder
- 3 tbsp. butter
- ¼ cup honey
- 1 tsp. baking powder
- Preheat oven to 180 degrees and line a loaf tin with baking paper.
- Blend all ingredients until it forms a smooth batter and then pour into loaf tin.
- Cook in a moderate oven for 40 minutes.
Tip: can also be made into muffins for lunch box snacks
