Chocolate Protein Brownies

Chocolate Protein Brownies

Low in sugar, high in fibre and protein makes these the perfect guilt free snack

Ingredients

  • 1 ½ cups black beans, drained and well-rinsed
  • 3 tbsp (15g) cocoa powder
  • 2 scoops (45g) chocolate protein powder
  • ¼ teaspoon salt
  • ¼ cup coconut oil
  • 1 tbsp pure vanilla extract
  • ½ tsp baking powder
  • ¼ cup cocoa nibs
  • 1/3 cup (75g) peanut/nut butter
  • 2 tbsp pure stevia, honey, rice malt syrup or coconut sugar (it is all the same energy content)
  • ½ cup frozen berries of choice (optional)

Method

  1. Preheat oven to 180°C
  2. Combine all ingredients except for cocoa nibs in a food processor, blend until smooth
  3. Stir in cocoa nibs
  4. Pour into an 8×8 square pan lined with baking paper (optional: sprinkle nuts or extra cocoa nibs over the top).
  5. Cook for 15-20 minutes or until cracks appear on top.
  6. Let cool (IMPORTANT) and refrigerate for 2 hours or until firm before cutting
  7. Enjoy! Store in refrigerator for up to a week
