Grain Salad Fritters

Adapted from SDA & Miele collaboration cook book. Makes a great salad for dinner, that can be turned into tasty fritters for lunch

Ingredients

  • 100 grams quinoa (rinsed well)
  • 100 grams brown rice
  • 75 grams buckwheat
  • 500 mls stock
  • 50 grams puffe amaranth
  • 25g slivered pistachios
  • 25g walnuts, chopped
  • 25g pumpkin seds
  • 25g sunflower seeds
  • 30g parsley

Dressing

  • 20ml extra virgin olive oil
  • 10ml walnut oil
  • juice and zest of 1 orange

Grain Fritters

  • ½ cup flour (gluten free if required)
  • 2 tbsp parmesan
  • 1-2 eggs depending on amount of leftovers
