Homemade Gourmet Crackers

Ingredients: (makes 40 crackers) 

  • 1 cup milk
  • ¼ cup brown sugar
  • ¼ cup Greek yogurt
  • ½ cup plain flour
  • ½ cup wholemeal flour
  • ½ cup dried cranberries
  • 1 tsp. baking soda
  • ½ cup rolled oats
  • ¼ cup sunflower seeds
  • Spices
    • ½ tsp turmeric
    • ½ tsp cinnamon
    • ¼ tsp nutmeg
    • ¼ dried thyme
    • 1 tsp. dried rosemary
    • ¼ tsp salt
    • Pinch of black pepper

 

Method:

  1. Preheat oven to 180deg. Grease and line a small loaf tin with baking paper
  2. Whisk the milk, sugar and yogurt in a bowl
  3. In a separate bowl, add plain flour, wholemeal flour and cranberries.
  4. Add remaining ingredients, including the spices and the milk mixture. Mix to form a thick batter.
  5. Pour into tin. Bake for 25min or until a skewer comes out clean.
  6. Cool on rack, then cling wrap and freeze for over 2 hours.
  7. Unwrap and partially thaw. Preheat oven to 120 degrees
  8. Use a serrated bread knife to slice thinly (approx. 2mm). Place biscuits on baking trays and bake for 50 minutes or until light brown
  9. Leave biscuits on tray to cool. Store in an airtight container for up to 4 months.
