The Red Salad

The Red Salad

This salad is super simple, but full of fruit and vegetables high in Vitamin C making it perfect for winter. It is also super tasty, so will convert the fussiest of salad eaters.

INGREDIENTS

300g spinach leaves

1 punnet strawberries, cut in quarters

½ cup bocconcini, cut in halves

½ cup cherry tomatoes, cut in halves

½ capsicum, diced

1-2 tbsp. mint diced finely

½ cup crushed mixed nuts

Dressing

Drizzle olive oil

Balsamic glaze to taste

 

METHOD

  1. Prepare and chop ingredients as required.
  2. Toss all ingredients in a bowl.
  3. Drizzle olive oil and balsamic glaze.
